  • 1 2/3 oz instant vanilla pudding mix
  • 4  large eggs separated the white and yellow yolk
  • 1 cup shredded carrots
  • 2 tablespoon pineapple crushed { optional]
  • 1 ¼ cup water or pineapple juice if using crushed pineapple
  • 1 carrot cake mix
  • for frosting
  • ½ cup butter
  • 2 tablespoon vanilla extract
  • 3 ½ cup sugar <powdered>
  • 2 8- oz packages of cream cheese


  • preheat the oven to 355 degrees
  • in a medium bowl beat the cake eggs yolk water sour cream pudding for 2 minutes. stir in carrot and pineapple.
  • in another medium bowl mix the egg white until the white and frothy. then mix egg whites into the cake batter until well blended
  • spray the bundt pan and pour cake batter into a greased bundt pan
  • bake the cake for 55 to 60 minutes or until a toothpick is inserted into the cake and comes out clean
  • remove from oven and let the cake to completely cool
  • remove the cake from the oven when it cools completely and when you remove the cake wrap and let it In the refrigerator for 12 hours before frosting and serving

For frosting

  • in a medium bowl combine the butter and cream cheese until smooth and creamy
  • mix in the vanilla then gradually add the sugar at a time start with 2 cups until the frosting is nice and thick
