Ingredients Of Lemon Blueberry Bundt Cake

3 large eggs

220g blueberries <fresh or frozen>

½ cup white flour

1/3 cup sour cream

1 large size lemon juice

11/2  cup self-raising flour

1 cup powder from sugar

2 cups butter unsalted

For lemon and blueberries drizzle and compote 

320g fresh blueberries

½ cup lemon juice

2 tablespoons sugar

2 ½ tablespoon caster sugar

Instructions  

Preheat the oven to 165 degree C and spray the bundt pan with nonstick cooking spray then dust evenly with flour

in a medium mixing bowl beat the sugar lemon rind and butter and mix them with a electric mixer for 2 minutes or until they well mixed together. Add the all the eggs at a time and again mix them after that add the combined sour cream lemon juice and flour in batches mix well after each addition.

Add the blueberries and mix again well to combine

With a spoon into the prepared bundt pan and bake it for 45 to 50 minutes or until a toothpick inserted into the centre of the cake and comes out clean

Before removing the cake from the pan please let the cake for 20 minutes if you remove the hotter cake the shape will destroy

To make the lemon drizzle in a medium mixing bowl  drizzle the lemon juice and icing sugar mix them until  they well combined together

Place the cake on a plate and spoon over the lemon drizzle. set aside to set

Cut the cake into slices and serve the cake with blueberry compote
