Ingredients Of Fruit Bundt Cake    

  • 400g all purpose flour
  • 4 large eggs
  • 1 teaspoon baking powder
  • 1 ½ cups sugar
  • 2 cups orange juice
  • 2 cups butter at room temperature
  • 1 teaspoon salt
  • 1 ½ teaspoon orange extract
  • 75ml brandy
  • 2 cups dried fruit

For Frosting 

  • 2 Cups hot water
  • 110g icing sugar

To prepare the fruit  

  • Quarter the cherries and roughly chop the fruit e.g. dried apricots, dates
  • Soak the fruit in water for 12 hours
  • Then heat them in oven for 4 minutes on a medium heat and then let them for 30 minutes until they well  cooled and set

For The Tin 

  • Set a baking sheet in the oven and heat the oven to 180’c
  • Spray the bundt tin with a non stick cooking spray Then leave the tin upside down over the sink to break the motion of the oil accumulating in the bottom

To Make The Fruit Bundt Cake

  • In a large mixing bowl mix the all ingredients and mix them with a electric mixer until they well mixed together  [ do not add the fruit]
  • Then add the fruit and the liquid and then mix them until they incorporated
  • Pour the ingredients mixture into your tin and then bake in the preheated oven for 65 to 70 minutes or until a tester inserted into the centre of the cake and comes out clean
  • Remove the cake from the oven and let it on a cooling rack for 35 minutes to cools completely
  • When its cools completely use a sharp knife and remove the cake slowly from the bundt pan

For The frosting  

  • In a small mixing bowl sift the icing sugar and then add 2 tablespoon hot water and mix them until they well combined together.  You add more water if the mixture is thicker
  • Then drizzle the mixture over the cake if necessary you can add more layers and then enjoy the cake
