 Ingredients For The Coconut Bundt Cake

  • 1 ½ cups sour cream
  • ½ cup cooking oil
  • 2 teaspoons fresh coconut extract
  • 1 box cake mix
  • 1-3.1 ounce box instant coconut pudding
  • 5 large eggs
  • 1 cup coconut milk
  • 2 cups coconut shredded coconut

For Frosting 

  • ½ cup butter {softened}
  • 1 teaspoon salt
  • 1 – 7 ounce package cream cheese {softened}
  • 2 tablespoons coconut cream
  • ½ teaspoon rum
  • 1 bag orange candy [melts]
  • Strawberries
  • ½  cup toasted coconuts
  • 4 ½ cups powdered sugar

Instructions To Make The Coconut Bundt Cake

  • Preheat the oven to 360 degrees and then spray the 11-inch bundt pan with nonstick cooking spray.
  • In a large mixing bowl  place the cake mix dry instant pudding, mix extract, sour cream, coconut milk, eggs, and cooking oil and mix them in a medium speed for 2 minutes or until they well mixed together.
  • Stir the shredded coconut in and mix again
  • Spoon the batter into prepared bundt pan and bake it in oven for 60 to 65 minutes or until a toothpick inserted in to the centre of the cake and comes out clean
  • Remove the pan from the oven and let it on a cooling rack for 20 to 30 minutes. When the cakes cools completely flip on a plate to decorate it

For the frosting

  • In a medium mixing bowl  beat the coconut cream, butter, cream cheese, salt and extract until they well mixed together Then slowly beat in the sugar until fluffy and light
  • Use a piping bag and icing on the cake slowly slowly and then sprinkle the cake with the toasted coconut
  • Then melt the candies according to the package directions and dip the strawberries into the melted candies and let them until set 
  • Garnish the frosting swirls with the orange strawberries or you can decorate according to your designee
  • Keep the cake in refrigerator for 30 minutes and after 30 minutes serve.
